Colombia Gilberto Chilo is an indigenous community member of the Nasa ethnic group and lives with his wife, Ana Alicia Bototo in the village of Carrizal in the indigenous reservation of San Lorenzo Caldono.
Gilberto and his family's ambition is to produce a high quality coffee to be enjoyed by discerning coffee drinkers. By implementing specific steps in their process, such as high quality fertiliser, a 15 hour ferment and solar parabolic drying, they have been able to achieve a wonderful result in the cup. This 1780masl crop of 4 bags is a real show of quality.
Gilberto has been a member of CENCOIC cooperative since 2013. CENCOIC is a cooperative for coffee producers which provides pooled resources and facilities to small farmers. Through the establishment of organisations such as this, we are able to enjoy such great coffees as Gilberto's.
